Cottage Cheese Cosmic Brownies ✨🍫
Bringing back the nostalgic @thereallittledebbie Brownies… but better for you! I’ve been wanting to make these for a while.. They are fudgy, chocolatey, and packed with protein thanks to cottage cheese + almond flour. Perfect for helping you hit your daily protein goals 😉
Ingredients
• ¼ cup chocolate chips (plus 2 tbsp, divided)
• 1 cup cottage cheese
• 2 large eggs
• ¾ cup coconut or granulated sugar
• 1 tsp vanilla extract
• ⅓ cup milk (I used oat milk)
• 1 cup oat flour
• ½ cup cocoa powder
• 1 tsp baking powder
• Extra chocolate chips or mini candy-coated chocolates for topping (optional)
Instructions
1. Blend cottage cheese, eggs, sugar, milk, and vanilla until smooth.
2. Whisk almond flour, cocoa, and baking powder in a bowl.
3. Combine wet + dry ingredients. Fold in chocolate chips.
4. Preheat oven to 350℉. Line an 8×8” pan with parchment paper and lightly spray.
5. Spread batter into pan. Bake 20–30 mins, until toothpick comes out mostly clean.
6. Cool fully.Top with extra chips or candy-coated minis for cosmic vibes.
7. Slice, serve, and enjoy the fudgy goodness!

🌟 Welcome to my Weekend Baking Chronicles 🌟
I love experimenting with new recipes whenever I have time. I feel a little cringe filming and seeing myself 😂 but it’s so cool to step out of your comfort zone, and I’m excited to share it all with you here.
This Tarta de Santiago is absolutely beautiful, and I made it a couple of weeks ago to welcome my parents. It’s an authentic Spanish dessert, and I love that it’s gluten free.
Here’s a quick recipe for you, and I’ll be posting the full version on my website soon!
Tarta de Santiago (Spanish Almond Cake)
Ingredients:
250 g (2½ cups) finely ground almonds
250 g (1¼ cups) granulated sugar
5 large eggs
Zest of 1 lemon
½ tsp ground cinnamon (optional)
Powdered sugar (for dusting)
Butter (for greasing the pan)
Instructions:
1. Preheat oven to 175°C (350°F) and grease a 9-inch (23 cm) springform pan.
In a bowl, whisk eggs and sugar until pale and thickened.
2. Add lemon zest and cinnamon (if using), and mix.
3. Fold in ground almonds until fully combined.
4. Pour batter into the pan and bake for 30–35 minutes, or until golden.
5. Let cool, then dust with powdered sugar.
6. Optionally, use a St. James cross stencil for decoration!
Enjoy this perfect slice of Spain! 🍰🇪🇸
