Keto friendly and vegan protein balls – I have been loving these midday energy booster. They are a great, healthy alternative to an afternoon coffee. I try and stick to one cup of coffee a day, limiting caffeine and refined sugar intake. Also great source of energy pre and post workout! You can sub the ingredients based on your taste and what you have in the kitchen.
Ingredients (cookie dough):
- 1 cup almond flour
- 1 cup toasted coconut flakes
- 1 tbsp maple syrup
- 3 tbsp coconut
Ingredients (glaze):
- 1 cup white chocolate chips
- 1 tbsp coconut oil
- sprinkles (optional)
Instructions:
- Combine everything except chocolate until dough is formed. Taste and adjust sweetness as needed.
- Scoop the dough into balls and place in the freezer
- Melt chocolate and oil. Dip the balls into the mixture using a tooghpick
- Sprinkle as desired & freeze.
