Vegan & GF Toasted Almond Coffee Cake

I recently tried a simple Vegan, Gluten-Free Toasted Almond Coffee Cake recipe and loved it for its clean, healthy ingredients. Ingredients (base):
β€’ 1 3/4 cup almond flour
β€’ 1/2 cup coconut flour
β€’ 2 teaspoons baking powder
β€’ 1/4 teaspoon salt
β€’ 1 teaspoon cinnamon
β€’ 3/4 cup coconut oil, solid (NOT melted)
β€’ 1 cup coconut sugar
β€’ 1/2 cup almond milk
Ingredients (almond streusel):
β€’ 1/3 cup coconut sugar
β€’ 4 Tablespoons almond flour
β€’ 1/2 teaspoon cinnamon
β€’ 1/3 cup chopped almonds
β€’ 4 Tablespoons coconut oil, melted

Directions:
1. Preheat oven to 325 F
2. In a small mixing bowl, combine the almond flour, coconut flour, baking powder, salt, and cinnamon.
3. In a stand mixer or using an electric hand mixer and a bowl, cream together the solid coconut oil and coconut sugar.
4. Pour in almond milk, mix.
5. Slowly add in the dry ingredients, mixing to combine.
6. In an 8”x8” pan, spray with coconut oil and add in coffee cake mixture.
7. Bake for 20 minutes (you will bake more after you add the streusel topping)
8. In a small bowl, combine all ingredients for the Almond Streusel. Once the coffee cake has been baking for 20 minutes, lightly sprinkle the streusel on top and bake for 25 more minutes – until the toothpick comes out clean.
