Ah, crepes! They take me right back to my amazing trip to Paris, where creperie stands were practically on every corner. My sisters and I couldn’t resist grabbing one (or two) while exploring the city. French crepes are something specialβ€”they’re thin, not overly sweet, and you can fill them with all sorts of goodies, from sweet treats to savory delights like ham and cheese. Back home, I practically grew up on crepes, devouring them at least 3-4 times a week. Now, I whip up a batch for my daughter’s breakfast quite often.

Normally, I don’t follow a recipe when making crepes. I just go with the flow and trust my instincts. But last night, I managed to snag my mom’s recipe. Believe it or not, it only took me 30 minutes to recreate those nostalgic crepes from my childhood. I hope you give this recipe a go soon! Bon appΓ©tit !

Ingredients:

  • 2 eggs
  • salt to sprinkle
  • 200g flour
  • 2 tablespoons oil
  • 200 ml sparkling water
  • 200 ml milk

Instructions:

  1. In a mixing bowl, whip the eggs by hand or with an electric mixer.
  2. Add the milk and 100g of flour to the eggs and mix well, ensuring there are no lumps of flour remaining.
  3. Gradually incorporate the rest of the flour, salt, and sparkling water into the batter. Mix until the batter is smooth and there are no clumps. If the batter seems too thick, add a little more sparkling water until you reach a pourable consistency.
  4. Allow the batter to rest for about 15-30 minutes. 
  5. Heat a non-stick pan over medium heat and lightly oil it. You can use a cooking spray or a small amount of oil on a paper towel to coat the pan.
  6. Pour a ladleful of the batter into the pan, tilting it in a circular motion to evenly spread the batter and create a thin crepe. Cook for a minute or two until the edges start to separate from the pan.
  7. Gently flip the crepe using a spatula and cook for another 10 seconds on the other side.
  8. Remove the crepe from the pan and transfer it to a plate. Repeat the process with the remaining batter, adding more oil to the pan as needed.
  9. Once all the crepes are cooked, you can fill them with your desired ingredients. 
  10. Roll up or fold the crepes, serve them warm, and enjoy this delicious treat!
