Pistachio Bars

These are SUCH a great snack to keep you on track with healthy eating! They are so delicious and taste like snickers. Easily substitute peanut for any nut butter

Ingredients: 

  • 1 cup pitted medjool dates
  • 1/3 cup maple syrup 
  • 1/3 cup peanut or any nut butter
  • 1 1/2 cups oats (I used quick 1-minute oats)
  • 1 cup of chocolate chips + 2 tbsp coconut oil (measure oil while it’s in a hardened state)

Instructions:

  • Blend dates with a bit of maple syrup to a thick paste. You can use a processor or blender to do this.
  • Transfer the dates paste into a bigger bowl and add nut butter and remaining maple syrup. Use an electric mixer to beat until combined.
  • Stir in oats and chopped pistachios
  • Form into the bars:  press the mixture into the 8×8 pan lined with parchment paper 
  • Optional Chocolate glaze: melt chocolate and coconut oil and spread it over the mixture. You can leave this out if you’d like. 
  • Refrigerate or freeze, and once the chocolate has cooled and hardened, cut into bars and serve.
